What really makes
Cocco Bello stand out among all other restaurants in town is that employees
make customers feel at home, by calling them by their name or just asking some
personal questions if they really know the customer. Also, Cocco Bello Cafe
offers fresh and a variety of food such as salads, pasta, paninis, chicken, seafood,
meats , and every dish is prepared at
the moment. The four competitive priorities that we have learned in Operations
Management class are cost, quality, time and flexibility. We will relate these
four competitive priorities to Cocco Bello Cafe. The order in which Cocco Bello
Cafe plays the priorities is quality, time, flexibility, and cost.
Quality
Cocco Bello Cafe is also identified by its outstanding
quality of service and food. The high- quality service is provided by highly
trained servers and highly trained cooking staff. Servers are always under pressure during peak
hours. However, they 're always
providing top service, such as being polite, taking care of customers by always
checking up on them, trying to avoid
mistakes when sending orders, checking orders before they are delivered, checking with the kitchen whether food is
ready or not, having good social skills, and
always being efficient at work. The food is made from fresh ingredients
providing a healthy and enjoyable meal. Cocco Bello staff is very creative when
it comes to the presentation of the food.
Time
Time is the second priority of Cocco Bello Cafe. Since
everything is made at the moment customers have to wait for a little while.
Therefore, servers provide customers with bread and olive oil soon after the server has taken their order. Servers have to keep in mind the amount of time that the
customer has been sitting waiting and make sure that the customer gets their
food on time. Since most of Cocco Bello Cafe's customers are repeat customers,
they usually order appetizers. Servers have to make sure that customers get
their appetizers first and also that their main course be ready shortly after
they're done with their appetizers.
Time is also very
important for Cocco Bello because they work mostly with reservations,
and based on the reservations, servers figure out how many sittings they are
going to have and how to accommodate them. Also, based on reservations, servers
know whether to take more reservation or try to push reservations for later or
earlier.
Flexibility
Cocco Bello Cafe is very flexible with its customers. Cocco
Bello gives customers the options to make their own dish, to substitute
anything that they don't want for something that they do want. If customers did
not like their meal or they found something wrong with their meal, they have
the choice of getting another dish or not being charged for that certain dish.
Customers have the option to bring their own wine or liquor.
Cost
Cost is the last priority of Cocco Bello Cafe for two
reasons. First, the restaurant is located in one of the wealthiest towns in New
Jersey and most of the people there are well-to-do. Second, Customers are so
satisfied with the three other priorities, that they do not mind paying a bit
more. In addition, Cocco Bello Cafe is willing to pay high prices to its
suppliers as long as it's good quality.
